I have a Kodak i1120 scanner which unfortunately doesn't have any Mac drivers. I was going to install the drivers under Parallels, but have just come across ExactScan. This appears to have drivers for over 100 scanners, including my Kodak i1120.
The Pro version also is able to do OCR and save a searchable PDF. I've downloaded the Demo, and am trying it out.
The other alternative I've discovered is DevonThink Pro Office Version, which has ExactScan built in. For some reason though, the demo I'm trying tells me it can't see my scanner.
